Makoto Matsuura spent five years in Sapporo before opening in Chamberí in 2023. The tonkotsu is Hokkaido-style: white and dense broth, wavy house-made noodles and imported nori. Thirty seats, essential to book on Fridays and Saturdays. One of the few ramen in Madrid with direct Japanese authorship and clear traceability.
