At Fuencarral, the menu pairs ramen with sushi, gyozas and Japanese small plates. Tori paitan, tonkotsu, tonkotsu miso and tantan-men offer different broth styles; there is also vegetarian ramen and brothless mazesoba. Japanese graphics, pop décor and the dining-room volume create an animated atmosphere, though they can distract from the broth’s aromas.
