Everything in-house: artisanal noodles with no additives, clean bone broth, seasonal toppings. The Sababushi — tonkotsu with mackerel katsuobushi — appears when the season allows and disappears without notice. The Fuencarral location is minimalist and small; Malasaña expands capacity without diluting the standard.
